The drivers that come with stuff are fine, but with graphics cards in particular, having the latest one can make a difference. When reinstalling, I get the latest graphics card driver, but use the audio, networking, and chipset drivers that came with the motherboard on a CD.
@Rommel - the bios is the one thing you really don't want to update too often, since those EPROMs or whatever can only be rewritten a very limited amount of times. If the power goes out while flashing or it otherwise fails, your motherboard is screwed. With drivers, worst case, you'll have to reinstall Windows, that's all.
@BluRR - on my PC, I have a Gigabyte sticker, Intel Core i5 sticker, Seasonic sticker, and windows 7 sticker that I stole off another computer.

For the IO shield, just push along the edges and it will snap into place. If you need to remove it, stick a flathead screwdriver along the edges and it will pop out.
