Hooboy.
Maybe for vegetarian sushi, but part of the reason 'real' sushi chefs have such lengthy training is to recognize the 'bad' parts of fish, infected with parasites, toxic, or just 'bad' in so many different ways, for so many different kinds of fish.
So this machine would be great for various kinds of veggie rolls, but I would not trust any 'raw fish' types of output, since a real sushi chef would make real sushi and demand his price, and the machine will be operated by McTards with special sauce.
Something to think about.

Well if we deploy it here in America we'll be sure to use ammonia gas on all the fish before putting it in the machine to ensure food safety
