So, awhile back when I got my dual monitor set up, I decided to try them out with HDMI cables. However, some of my screen was cut off when I used HDMI, so I decided just to use the DVI cables instead of messing with trying to figure out the problem. Am I missing out by not using HDMI? If so, has anyone else had this problem and do you know how to fix it?

Do you have overscan enabled in the video card's settings? If so, that's almost certainly the culprit.

Thanks, man! I'll definitely give that a look. Do you think I'm missing out on not having them set up through HDMI?

The only thing you gain with HDMI is that audio is sent through the same wire - that's it. The signal is identical. (literally - it uses the same signaling for that as DVI, and you can get cheap adapters with no loss between the two because of that)

I did it and Overscan was definitely the problem. Thanks, LiveBrian!
